Spinach and Potatoes Over Rice

What you need: 

2 cups vegetable broth, divided
2 cloves garlic, minced
1 small shallot, chopped finely
1 potato, cubed
10 ounces chopped spinach
1 cup water
2 (8 ounce) pouches instant brown rice

What you do: 

1. Ladle a little broth in a pot on medium, and add shallot and garlic.
2. Let this cook for a couple minutes, and then add some more vegetable broth. Gradually add in broth, spinach and potatoes.
3. Add the water in last. Put a cover on the pot, and let the mixture cook. It may look soupy but it should smell great! Stir occasionally.
Serve over rice.
