Spinach and Artichoke Dip

What you need: 

4 tablespoons olive oil
1 red bell pepper, chopped
5 cloves garlic, minced
1/4 cup nondairy milk (I use soy)
1 (15 ounce) can artichoke hearts, chopped
1 (8 ounce) package vegan cream cheese (I like Tofutti)
1 cup green onion, chopped
1/4 cup chives, chopped
4 tablespoons vegan mayonnaise (I use Veganaise)
1/3 cup nutritional yeast
1/4 cup vegan parmesan
1/2 block (about 5 ounces) vegan cheddar (I use Follow your heart), divided
1 (10 ounce) package chopped frozen spinach, thawed
salt and pepper, to taste
1 tomato, chopped

What you do: 

1. Preheat oven to 350 degrees F. Heat oil in skillet, add peppers and garlic, saute 4 minutes over medium heat. Add milk, and heat for 1 minute.
2. Add artichokes, heat 2 minutes. Add cream cheese, green onions and chives, and heat through until melted. Add parmesan, nutritional yeast, 1/2 the vegan cheddar and vegan mayonnaise.
3. Let heat until completely melted, and then add spinach. Stir and let heat for 3 minutes. Season, to taste. Pour into oven safe dish, top with the rest of the vegan cheese and bake for 10 minutes.
4. Remove from oven and top with chopped tomato. Serve hot with tortilla chips or small slices of garlic toast.

Oh Corinnas, you rock!   This was the most delicious spinach and artichoke dip I've ever had, vegan or not.  I made it and pored it into my mini crockpot and it was gone by the end of the night.  I got so many compliments by people who didn't even know it was vegan.  It will definitely be my new staple for parties.  Thank you so much!


This was AWESOME!! I made it tonight as an appetizer with dinner, and no one could stay away from it! Luckily dinner was served soon after, so I have left-overs   :)  Will definately be making this again. Only changes I made: I used rice milk instead of soy milk, because my soy milk went bad, and I didn't have any soy parmesan (I can't find it anywhere), so I used 2/3 cup nutritional yeast. I also didn't put any extra cheese on top, I figured it would rock enough with diced tomatoes, and I was right  :)>>> My whole omni family loved it


OH MY!!!  This recipe just made me extremely hungry!  I HAVE to try this!  My mother and I are going shopping today...guess what ingredients are going on the list?!?!  YOU'VE GUESSED IT!!


very very very delicious!! my only suggestion is to chop up everything relatively small so you get a smooth dip. In the picture, I just laid sliced follow your heart cheddar cheese along the top.
I personally think their mozzarella is the best flavor and may try that 'cheese' next time.

but overall, very good especially with crunchy tortilla chips. I liked dipping those more than bread even
