Spicy Vege Roasties

What you need: 

1 teaspoon garlic powder
1 teaspoon onion powder or flakes
1 teaspoon black and white pepper
1/2 teaspoon dried rosemary
1/2 teaspoon marjoram
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon cayenne pepper
1/4 cup vegetable oil
2-3 pounds root vegetables (potato, parsnip, butternut squash, yams, carrot), peeled and chopped
(potatoes slightly larger than the rest)

What you do: 

1. Preheat oven to 400 degrees F. Mix the spices and herbs with the oil.
2. Toss spice mixture through the vegetables in a roasting pan.
3. Roast in oven for 30 minutes or more, turning a few times, until all the vegetables are tender and golden.

SO HOW'D IT GO?

I love this recipe. I had just bought a bunch of root veggies from the farmers market so this worked out perfectly. I used carrots, beets, sweet potatoes, russet potatoes, and onions. I also had to cook mine longer (almost an hour) to make the beets softer but I usually have to cook things longer because my oven isn't that great. The spices worked perfectly but i didn't want to bother dirtying a measuring spoon so I just eyeballed it and I left out the dried rosemary because I didn't have any.

I made this tonight for dinner, and I really enjoyed it! My omni DH was less enthused, but that's just b/c he doesn't realize the goodness of a veggie life.  ;D I put some grated Parmesan and Romano on top (I'm lacto-ovo) and left out the cayenne b/c my toddler son was eating this as well. And the recipe got us to try turnips for the first time. Thanks!

This recipe rocked! I didn't have swede, not even sure of what it is...and I didn't have thyme. I also left out the cayenne pepper. In addition to the oil, I added about a tablespoon of melted butter mixed with about two or three tablespoons of orange juice. The perfect autumn dinner!

I liked this! I have made similar meals, roasting the ingedients with majoram, thyme, oregano and rosemary, with vegan butter, white wine and lemon, and that's good. The addition of white pepper and cayenne in this version was a nice twist, and I liked it. I didn't use onion powder, and upped all the spices just a little. I also added diced apples, and it was PERFECT!! I'll definately make this again, thanks!
