Spicy, Tangy Vegan Veggie Dip
3 14 oz. cans of garbanzo beans
5 tablespoons of lemon or lime juice
1 teaspoon olive oil
1 cup fresh, washe'd spinach, chopped
1/2 cup fresh chopped walnuts
1 clove of garlic, minced
2 teaspoons minced onion
2 small jalapeno peppers (seeded and sliced)
2 tablespoons black pepper
salt to taste.
Mash the garbanzo beans until they are like mush. Blend all ingredients above in the mashed beans.
If you have a food processor, this is really easy. Just put it all in and blend well. Add some soy milk if it is to thick.
