Spicy Pineapple Salsa

What you need: 

1 cup chopped fresh pineapple(or o.k. to use canned)
1/4 cup chopped sweet red pepper
1/4 cup chopped fresh cilantro
about 1 chopped scallion (to taste)
few dashes of red wine vinegar
few dashes of hot sauce
about a teaspoon of brown sugar
Note: add more or less of any ingredient to your own taste.

What you do: 

Mix all ingredients together and let set a while in the fridge. Its wonderful over rice and beans or broiled tofu or lightly steamed asparagus or other green vegetable or salad. Also great as a cold snack when stuffed into sliced celery sticks. you can also warm it a bit if you don't like a cold salsa on hot food.
