Spicy Peanut Noodles

What you need: 

8 ounces spaghetti or Asian noodles
1/4 cup peanut butter
1/4 cup hot water
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1/2 teaspoon minced fresh ginger root or 1/4 teaspoon ginger powder
1 green onion, chopped
1 clove crushed garlic
1 teaspoon rice vinegar
1 teaspoon Asian chili garlic sauce (dried chili peppers will also work)
1 small cucumber, peeled and julienned

What you do: 

1. Cook pasta according to package directions. Drain. Rinse with cold water. Drain well.
2. Meanwhile, dissolve peanut butter in hot water. Add the rest of the ingredients. Stir sauce till thoroughly mixed.
3. Toss noodles with sauce. Add a handful of julienned cucumber to noodles. Sauce can also be used as a dressing or for dipping.
Source of recipe: This is my version of a Taiwanese dish known as "liang mien" or "cool noodles." It's quick, easy, and delicious. It's traditionally served cold but can be eaten warm if that's your preference.

SO HOW'D IT GO?

In case anyone was wondering, a serving of 1 cup noodles and 1oz (2 TBSP) sauce is 243 calories, approximately. 

This was extremely good. The non-vegan boyfriend and the vegan baby ate it up and asked me to make it way more often. Thanks for contributing!
