Spicy Pasta and Tofu
1 large onion
10 mushrooms (1/4 in. slices)
3 cloves minced garlic
olive oil (as needed)
crushed red peppers, oregano, basil to taste
1 block of extra firm Mori-Nu tofu
3/4 pounds pasta (penne or mostaccioli)
Begin boiling water in medium sized pot.
Heat olive oil in a large frying pan. Press water out of tofu and cut into 1 inch cubes. Fry until golden brown on all sides.
Cut onions into half rings and add them along with the mushrooms and dry spices. Stir fry veggies until golden brown. Add minced garlic, and cook for 3 more minutes.
Meanwhile, add pasta to boiling water. Cook then drain off water.
Stir contents of pan in with the pasta, adding a little more olive oil if needed. If desired, add a very small amount of pasta sauce to the mix.
