Spicy Corn Soup

What you need: 

2 cups corn (canned or frozen)
3/4 cup soy milk or other non-dairy
1 teaspoon chipotle or chilli powder
salt and pepper to taste

What you do: 

In a food processor, puree corn. In a saucepan, bring pureed corn, soy milk, and spices to a boil over medium heat. Mix and serve.
Optional: Garnish with green scallions and vegan sour cream.

SO HOW'D IT GO?

wow, sooo good! I added some red onion and red pepper sauteed in olive oil, as another user suggested. 4 ears of fresh corn made about 2 cups. Will definitely make again :)

I didn't think something with so little ingredients could be so tasty. I did cook onions and red pepper in some olive oil first and garnished with cilantro. It made about 1 1/2 servings...for me at least.  Will make again!
