Spicy Chickpea Snack

What you need: 

2-4 tablespoons cooking oil
1 tablespoon Cajun spice
1 tablespoon chili powder
1 teaspoon salt and pepper
1 (15 ounce) can chickpeas, drained and rinsed

What you do: 

1. Preheat oven to 400 degrees F. Pour oil into baking pan, add spices, mix well.
2. Add chickpeas and mix until well coated.
3. Place in oven for 15-20 minutes, or until crunchy. Stir once half way. Enjoy cold or hot.
I like to eat these instead of chips or other junk while I watch a movie.

love this recipe.  Easy and great tasting! I adjusted the seasonings and did not add salt great anyway!!

As someone who hadn't really encountered chickpeas outside of hummus before, I'm immediately adding this recipe to my favorites. I tried them today for the first time and loved them. Like many other people who've commented before, I had to leave them in the oven longer than the recipe suggests, close to 40 minutes, but was satisfied with the result overall. I didn't find it necessary to add salt or pepper, since my Cajun seasoning mix contains both and I might adjust the amount and type of seasoning in future batches for variety.

I love these! I make them frequently, but they take forever to get crunchy. I usually give up and just eat them anyway ;-) In my experience, black chickpeas seem to become crunchier, but it still seems to require a ridiculously long time in the oven. Worth it, though.

Yummy. Healthy. Easy. Make this.
I used only 1 Tbs. oil and no salt and pepper since my Cajun mix had some.  I had to bake it at 400 degrees for 35 minutes for mine to get crunchy.

Ps.  Mine were cooked in the time the recipe called for, which I think is due to my oven thermometer keeping me honest.  Before I got a thermometer in the oven almost none of my recipes would come out as predicted in the recipes I use, and now they all do.  If you don't have a thermometer in your oven, I urge you to get one, especially if you're baking!

I can't even tell you what a relief this recipe is...totally replaced my chip craving with this healthy treat! Thanks

I feel exactly the same way.  My chip craving is quite extreme, requiring several kinds of chips at each sitting, and with a big bowl on the table every night, all just for me!  I am going to make several batches with different seasonings (jalapeno, wasabi, salt and vinegar), and different beans and see how far I can take it.

i have made these soooooo many times, and i finally took pictures of them!

i found i had to bake these for at least double the time recommended, just to get them crunchy. is it my gas stove, or something i did?
