Spicy Chai Tea

What you need: 

25 cloves
12-15 cardamom seeds
2 tablespoons fennel
2 cinnamon sticks
1/2 teaspoon black peppercorns
4 bay leaves
1 tablespoon ginger
7 cups water
2 black tea bags
6 tablespoons brown sugar
1 cup nondairy milk

What you do: 

1. Add cloves, cardamom, fennel, black pepper, cinnamon, bay leaves, ginger, and water together and bring to boil.
2. Simmer for 1 hour. Add the black tea bags and bring to boil.
3. Steep all the ingredients for 10 minutes.
4. Strain and add milk and sugar.
It’s so good.

SO HOW'D IT GO?

This was delicious!  I used fresh ginger, about 2-3 inch young finger, sliced and increased the cardamom, just because I love cardamom.  I simmered it for 1 hour.  I wanted a decaf evening treat so I brought it to a boil and added 6 roobios tea bags and simmered 10 more minutes.  It boiled down quite a bit so I added more water after I strained it and it was still plenty strong to serve with milk and honey.

This is AWESOME!  :D I did add fresh nutmeg and 2 star anise pods.  It was fabulous.  Thank you for sharing.

Even though your spices were freshly bought it doesn't mean they were fresh. Check the package...they may have been in the stockroom or shop for a long time.

I made this yesterday, simmering the spices for only 30 min before adding the tea because I was short on time. Added panela during the simmering to bring out the flavours. I chilled it when done and it makes wowza cold chai!

The spices had a strong smell to them, compared to the spices I already had in the house.  I bought in bulk so there is no package to check!  I might mash the spices up and try again, but I think it's a taste preference issue; I tried someone else's chai mix and I didn't like that either. It tastes like cinnamon water and I don't love cinnamon that much.

I made this exactly as the recipe stated, except maybe the mixture didn't stay at a good simmer for the whole hour, and it isn't flavorful at all!  Does anyone have any suggestions? It tastes really blah. The tea and most of the spices were bought recently. Should I bash them up a little first?  I want to drink it iced, so there'll be even more water in it eventually.  Is less water the answer to all my problems?

I've been using Tazo's chai concentrate mixed with an equal amount of almond milk, and I loooove it.

Oh, wow, this was so delicious! The only thing that I wish I could change is the need to add cardamom... don't get me wrong, I'm lovin' the cardamom in here, but it's a little pricey... I wish there was a more economical substitute that also tasted as good. This recipe itself, however... blissfully delicious!

I used a cup of full-fat coconut milk, and used some fancy spiced chai bags for the black tea bags. I might have put a little more cardamom than needed (mistook pods for seeds) but ahhhh. A little bit sweeter than I'd like, but damn this is good! Thank you for posting this!!!

I drink chai like its going out of style and I absolutely LOVE this recipe! Since I am the only one in my house that drinks tea I didn't want to have to make it all at one time, so I put the ingredients in my coffee grinder and broke everything up a little so it wouldn't have steep it so long. Now in the morning I just put a few tablespoons of the mixture in my french press and let it steep for a few minutes and I have a delicious cup of tea! Thanks so much for this great recipe! :)

I used 1 1/4 teaspoons ground cardamom instead of cardamom seeds, and slightly less than 1/2 tsp of ground black pepper (instead of peppercorns)....but yeah, it's sooooo good!!!

This was very, very yummy! I will make it again. I don't think that mine reduced as much as it should have, was having some difficulty with the stove and maintaining a simmer for the whole hour. I used vanilla soy milk and agave nectar in mine. Thanks so much for the recipe!
