Spiced Lentil Carrot Veggie Burgers

What you need: 

1 cup uncooked lentils
3 carrots, grated
1 onion, diced
3/4 cup whole grain flour, as needed
pinch sea salt and black pepper
1 teaspoon coriander
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1 to 2 teaspoon(s) olive oil

What you do: 

1. Before you begin, the lentils must be fully cooked. Gently boil them in enough water to cover them by 2 ", with NO salt. Lentils will take about 30 minutes to cook. Drain lentils and place in bowl.
2. Add carrots and onion. Mash them a bit, but not too much. Add enough flour to get them to the point where they will stick together. You may also need to add a bit of water.
3. Season the mix with the spices (coriander, cumin, cayenne pepper, salt, and black pepper); stir them through well. With your hands, form the lentil mix into burger shapes.
4. Add a teaspoon of olive oil to a heated pan and lay the burgers in. Leave them for about 10 minutes on the first side, flip, and cook another 5 to 7 minutes. Put the burgers in an oven on low heat to keep them warm while you cook the second batch.

SO HOW'D IT GO?

yum! i just made these and they turned out great! i added some chopped red bell pepper and a little garlic powder. i did have to add a little water to make sure they stayed together. it made quite a bit of "mix" so this will be great for leftovers, too!  ;)b

Recipe turned out great!  I followed the suggestion above and placed them in the freezer for a bit to help firm them up, which was beneficial.

I also added about a teaspoon of Liquid Smoke which made them taste even more grill/burger-like.

Good stuff. I made a mess like I always do when making veggie burgers. They have a nice flavor and texture and were just a little easier to make than my black bean burgers, but I'm not sure which ones I like the most still! Anywho, thanks for the recipe. I had leftover bits from the rutabaga chips I made, so I mixed them in the batch along with the other ingredients.

This is a very good recipe.A great way to get protein and nutrition together.  I added a bit more sea salt than it called for but I will definitely make it again. I did not need to add any water, I kept my eye on the lentils as they were cooking and was left with a small amount of water so I did not drain it and added enough flour to make it stick together.  Very Good!!!

These are 10x better than any black bean burger I've tried to make! They hold together really well, and the suggested seasonings are noticeable, yet subtle enough not to get in the way. I did have to add at least 3/4 c flour, and I stuck everything in the freezer for 10-15 minutes to try to get it firmed up a little more. It worked, and the patties were much easier to form (using a little extra flour to shape the patties).
