Spanish Rice

What you need: 

1 1/2 tablespoon olive oil
1 1/2 cups white rice
2–2 1/2 cups vegetable broth, reduced sodium
1 can salsa
A shake or two of garlic powder
A shake or two of onion powder

What you do: 

1. Heat oil in large skillet. Stir in dry rice; once it begins to brown stir in both the can of salsa and the vegetable broth. Bring to a boil. 
2. Lower to a simmer, cover, and cook for 20-25 minutes or until all liquid has been absorbed. Enjoy!
