Soyrizo Potato Enchiladas

What you need: 

1/2 large onion, diced
1 or 2 cloves garlic, minced
2 tablespoons oil
3 cups potatoes, diced
1 (12 ounce) package vegan chorizo (I use Soyrizo)
4 cups enchilada sauce, divided
10 medium tortillas

What you do: 

1. Preheat oven to 350 degrees F. In a large skillet over medium heat, cook the onion and garlic in the oil until soft. Add potatoes and cook until they are soft (no need to crisp them).
2. Add chorizo and stir to combine. I like this mix as is, but if you want it hotter you can add spices or some hot peppers. Prepare a 9x13" glass plan. Pour about 1 1/2 cups enchilada sauce on the bottom, or enough to cover.
3. To assemble the enchiladas, put some of the filling along the middle of a tortilla, spreading it out evenly. Roll and place into pan. Repeat until pan is filled.
4. Cover with the remaining sauce. Bake for 20 to 30 minutes, or until heated though and the top starts to look "dry." Remove from oven and eat! Yum!

SO HOW'D IT GO?

Didn't have enchilada sauce, so made soft tacos with the recipe... excellent. super tastey :)

AMAZING.  :)>>> It was awesome! I made it for my family--five meat eaters--and they all loved it and thought it was FAB.

My brother-in-law helped out by making the sauce. He followed the recipe for the sauce, but to thicken it a bit he added some silk soymilk, and added LOADS more of the spices left. And then it was too thick so he added a bit of water to thin it out. We ended up having loads more sauce left over but all in all it was an AWESOME meal! :>

This recipe, is hands down the best recipe I have yet to try out from Vegweb. The flavor was awesome, not too heavy (which I was nervous about) and was a huge hit for my husband who is quite the picky eater! The only thing I did different was used shredded verses diced potatos. Very pleased with this recipe!

I'm usually a wimp about trying recipes on vegweb that don't have previous reviews, but I made these anyway. They are AWESOME!!! Such a simple recipe but SOOO GOOD!!! I made homemade torillas and enchilada sauce and followed the filling exactly...oh geeze, they rocked! My omni husband and the 5 yr old loved them, which makes me a very happy person! Thanks so much for the recipe!!!! ;)b ;)b ;)b
