Southwest Skillet

What you need: 

I bag Boca Crumble

1 large onion , chopped

2 T. vegy oil

1 can kidney beans, drained

1 can black beans, drained

1 Large can crushed tomatoes (28 oz.), undrained

1 1/4 cup instant rice

1/4 cup chopped green pepper

Hot sauce, garlic powder, Mrs. Dash to taste

1 cup coarsely ground cornflakes

1 cup Daiya cheese substitute

 

What you do: 

Cook onion with vegy oil until translucent and then add boca to thaw it a little

. Add the rest of the in gredients to pot excpect for corn flakes and chesse.

Cook on stove top with closed lid on simmer for 20-30 minutes.

Last 5 minutes turn off the burner and add cheez and corn flakes

. Replace the lid and let it set for 5 minutes.
