Southern Italian Tomato Salad

What you need: 

4-5 large ripe tomatoes, wedged
1 medium sized green bell pepper, thinly sliced
1/2 large red onion, thinly sliced
1/2 cucumber, thinly sliced (optional)
1/4 cup red wine vinegar
1/8 cup extra virgin olive oil
2 pinches dried oregano
salt and pepper (to taste)

What you do: 

Place all veggies in a bowl, add vinegar and oil, then spices. Cover and place in refrigerator for at least 30 minutes. Serve with crusty bread to soak up all the wonderful juices!
Source of recipe: My mom (who is from Italy) used to make this summertime salad for us!

SO HOW'D IT GO?

This is a very nice salad and very much like one I've been making for years.  If you throw in a handful of Kalamata olives and use fresh squeezed lemon juice instead of red wine vinegar it becomes Greek!  Versatility is a beautiful thing.  This is also suitable for raw foodists.
