South Western Potatoes

What you need: 

2 large potatoes (or 4 small ones)
dried basil
1/2 red bell pepper
1/2 yellow bell pepper
olive oil (veg. oil is acceptable....olive is better for you)
paprika
1 small onion
garlic

What you do: 

-microwave potatoes for 8 min.
-cook the onion and bell peppers, sliced,with the minced garlic in olive oil on the stove.
-add the paprika,and basil
-slice the potatoes
-add the potatoes to the mix
-cook until the potatoes are browned and the peppers look cooked
(If you put the potatoes on vegan buttered toast, it's SOOOO GOOD!)

SO HOW'D IT GO?

This recipe was great! I chopped both the potatos and bell peppers, but I think next time I will shred the potatoes and almost mince the peppers just to make it more decorative. They could add a little bit of moisture, maybe a bit of vegan margarine or something...I just added a little bit of garlic salt and it was fantastic. Thanks for the great recipe!

Just a question...DO you just toss the potatoes in the microwave? or, do you put then in a polastic bag or a bowl with a little water, or what?  :) I wonder...

very nice! i subbed frozen hashbrown cut potatoes for the fresh ones and used a frozen pepper/onion mix instead of fresh. the bazil and paprika make these pretty special. i added a little salt and these were great!
