South Indian Potato Curry

What you need: 

1 pound potatoes, cut into large chunks
1 tablespoon vegetable oil
1 teaspoon black mustard seeds
1 large onion, chopped
1/2 teaspoon turmeric, optional
1 teaspoon ground cayenne
salt, to taste
cilantro, to garnish

What you do: 

1. Steam or boil potatoes until tender, but not too soft. In large frying pan, heat oil briefly. Add mustard seeds. When they start to pop, add onions.
2. When onions are soft, add everything else. On medium heat, continue to cook and stir for about 5-10 minutes. Stir from bottom to keep from sticking.
3. Serve hot with cilantro, rice or pita, vegan yogurt, chopped cucumber, Indian pickles, etc.

This was very simple to make and turned out well with a few small mods. I definitely used the onions and turmeric. I thought it strange that those would be optional???

I was low on turmeric and thought it might be bland, so I added a couple pinches of curry powder and some garam masala. I didn't add the whole amount of cayenne...just a couple of healthy shakes. Overall, I liked this and will definitely be making it again.
