Quick and Easy Cream of Tomato Soup

Ingredients (use vegan versions):

    4 tablespoon finely diced onion
    1 tablespoon soy sauce
    1 8 oz. can tomato sauce
    2 cup rice milk
    2 tablespoon cornstarch
    seasonings to taste

Directions:

Last night, I had a craving for cream of tomato soup, so I made up this recipe.  This is loosely based on a recipe I learned in my 8th grade home economics class (over 20 years ago).

Saute onion in soy sauce until onion is tender.  Add 1 1/2 cups of rice milk and 8 oz. tomato sauce to onions, and bring to a boil.  Mix 2 T. cornstarch with remaining 1/2 cup of rice milk.  Add cornstarch/rice milk mixture to soup, stirring constantly until thickened.  Season to taste with your favorite seasonings.  (I used a little onion powder and some spicy Creole seasoning.)


My husband, not a creamy soup fan, really enjoyed this recipe and for me that spells success.  I added basil, thyme, dill and garlic salt for extra flavor.  Although it won't affect the taste, next time I think I'll puree sauteed onions in the blender before adding to soup.  If any of you are fans of the Tomato Dill soup served at Mozzarellas (a restaurant formerly known as Silver Spoon Cafe in Atlanta), this recipe with my seasonings tastes even better.

Its about 30 degrees here in NYC today.  Before I took the dog for her walk, I put on a pot of this soup.  By the time I got back, I was frozen solid, but the soup was nice and hot...  One bowlful later I had completely thawed out!!  A+ YUM!YUM!

Sounds good...but the addition of soy sauce sounds strange...does any one think a 10 year old boy raised on Campbells will like it?

You could probably take a can of Cambells tomato soup and add the rice dream to it.  Thats how my dad always made cream of tomato soup.  Just a thought from the (very) lazy cook.

This soup was yummy! I used some coconut milk instead of rice milk and added a bunch of spinach and lots of fresh basil and dill and cubed soft tofu and it was a full meal.

Absolutely Delicious!  I first saw this recipe at the beginning of last week and I've made it three times already. My kids adored it. Never thought I'd find a tomato soup recipe that would make up for not having Heinz Tomato Soup available where I live.  Thanks.

Ooooh yummy!!  I added a few fresh tomatos too and blended it all together.  For spices, I added some garlic, fresh dill, thyme, and basil.  It was delicious and so incredibly easy.  Highly recommended to all!  Smiley

This soup was wonderful!!  I used an already seasoned tomato sauce so I did not have to add anything extra.  I don't think you need quite that much corn starch. This makes a great base for any vegetable soup.  Thank you!!

Tasty soup!  I followed the recipe and seasoned mine with Vegesal, black pepper, powdered chicken broth, and a seasoning blend called pasta seasoning.  Next time, I'm going to try basil, thyme, and dill.  You can use a little less cornstarch, depending on how thick you like your soup.

Love this recipe.  I'd been looking for a vegan cream of tomato soup for sometime and finally found an easy recipe I like.  When I fixed it for lunch today, I added my own tweaks.  I omitted the onion and added:  1 fresh tomato, seeded & chopped; 2 tablespoons fresh dill; 1 to 2 teaspoons curry powder, & about 3/4 cup white (cannelini) beans.  If you just have dried dill instead of fresh, use about 1/3 what the recipe alteration calls for.  1 tablespoon fresh herb = 1 teaspoon dried.

I also forgot to add I used fat-free soymilk instead of rice milk, but it did not sacrifice anything in the way of taste or creaminess.

This also makes for a great pasta sauce! Just add a bit more cornstarch, serve on pasta and top with lots of nutritional yeast Smiley Mmmm..

I very much enjoyed the soup. Used soy milk rather than rice mile and it was very good.  However, I agree that less corn starch should be used. Smiley
