Taras Spinach Soup

Ingredients (use vegan versions):

    1 10-oz box frozen chopped spinach
    1 pkg. 1-lb. macaroni (or smaller)
    1 box Knorr Vegetable broth (or equivalent)
    1-lb. Firm Tofu (optional)

Directions:

Run the spinach under hot water to thaw out.  Boil macaroni to desired tenderness. (to make the macaroni taste a little better, add one of the cubes or alittle broth) Prepare soup as directed on package. Make it to desired taste.  When soup is at boil, add spinach and let cook for about 5 minutes.  (if adding tofu, chopp it into small chunks about 1/2 in. add while on heat---let cook 2 more minutes) Then, remove from heat and add macaroni.Its done!

Preparation time: 10-15 minutes max.

Nutrition Information: Less than 1 gram a fat per 1 cup of soup!


I think Knorr vegetable broth has gelatin in it!!!! : )
