Sopapilla

What you need: 

1 corn tortilla
1 tablespoon canola oil
1 tablespoon pure maple syrup
cinnamon to taste
powdered sugar to taste (grind unrefined granulated sugar to get vegan powdered sugar)

What you do: 

Heat oil in a small skillet. Fry the tortilla until crisp. Drizzle with maple syrup and sprinkle with cinnamon and powdered sugar.

Soooo good!!    :D

Quick.  Easy.  Tasty.  Delish with some vegan vanilla ice cream on top.  I know, as one of the reviewers above pointed out, that this is not a traditional home made sopapilla, but it's just too easy and good to pass up!
