Soft Pretzels

What you need: 

1 1/3 cups warm water
1 1/2 tablespoons sugar
2 1/2 teaspoons yeast
2 tablespoons olive oil
4 cups flour (half and half white/whole wheat)
1 teaspoon salt
2 cups water
1 tablespoon baking soda
kosher salt, poppy seeds, and/or sesame seeds, to taste

What you do: 

1. Cover baking sheet with parchment. Combine warm water, sugar, and yeast. Let rest 10 minutes. Add oil, flour, salt, and knead for 10 minutes (or put in a bread machine).
2. Divide and roll into long ropes; shape into a pretzels. Place on prepared baking sheet until doubled in size, about 45 minutes.
3. Preheat oven to 450ºF. Bring water and baking soda to a boil. Liberally brush hot water/soda onto each pretzel and sprinkle with kosher salt, poppy seeds, and/or sesame seeds.
4. Bake or 12-15 minutes, flipping baking racks half way through if you have two sheets.

SO HOW'D IT GO?

Best recipe on VegWeb, seriously. I usually make nuggets because I suck at pretzel shapes, and they're always a huge hit.

Excellent recipe!  The pretzels were PERFECT, and we ate them all in one night.

I used 1/2 cup soy flour, 2.5 cups whole wheat flour, and 1 cup white flour when I baked the pretzels.

Also, this is a great project for kids.  I'll divide the dough between us, and we each knead and shape our dough-- I brush the soda/ water on the pretzels and salt them-- then we have pride in and eat the outcome.

eeerrrrr....  i think next time i will use just unbleached white flour, the whole wheat flavor was a bit over-powering...

I completely missed the note to use half white/half wheat flour - I used only white, and these came out great!  The dough was really easy to work with.  I don't think I'd try them with wheat flour; like you said, the flavor would be too dominant.  =)

These are in the oven now, but I don't know....  the dough seemed soo dry, and i couldn't get it to roll out- the dough was very elasticy...Also, they don't look nearly as yummy as the other picture...  I will keep ya posted...

Oh my gosh.  These were absolutely awesome.  And totally easy.  I sprinkled a garlic salt/parsley mix on them before baking... soooo good.  Next time, I'm going to add some chopped jalepeno slices.  These are really good dipped a nooch cheese sauce.  Yum!  Thanks!

Oh yeah... in case anyone else was confused... another recipe for this kind of pretzel said to mix two cups of hot water and two tablespoons of baking soda to brush on the pretzels.  This recipe doesn't have the baking soda listed but the directions call for it.  =)

I don't see baking soda on the ingredients list - how much do you need for this?  Thanks!  Can't wait to try these!
