So Good Chili
oil, as needed
1 green pepper, chopped finely
1 zucchini, chopped finely
6 large carrots, peeled and chopped finely
1 medium onion, chopped finely
2 (28 ounce) cans crushed tomatoes
4 to 5 tablespoons chili powder
1/2 teaspoon salt and pepper
2 tablespoons chopped garlic
1 (15 ounce) can black beans, drained
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can red kidney beans, drained
1 (7 ounce) can mushrooms
1. In a large pot, add chopped vegetables and mushrooms with a little oil and a tiny bit of water.
2. Saute until vegitables are soft. Add crushed tomatoes, seasonings, beans, and stir to combine.
3. Simmer 2 hours, stirring occasionally, until heated though.
So delicious and healthy. Helped me lose weight. Enjoy.
