Smooth Roasted Red Pepper and Tomato Sauce
1/4 cup extra virgin olive oil
1 Tablespoon salt
6 garlic cloves, whole
3 red peppers, cut in large chunks
8 Roma tomatoes, halved
1 teaspoon dried chili flakes
In a baking dish, toss all ingredients together. Put in a 425 degree oven for about 25 minutes, or until everything is soft and cooked through. Don't be afraid if the pepper skins burn a little bit.
Peel off any burnt skins, and throw the whole thing into a food processor or blender. Process or Blend until smooth and serve!!!
Be very careful when process/blending that the lid is on properly, otherwise the hot ingredients may splatter. If you are scared, wait until it is cool enough to handle then blend and reheat when you want to serve.
