Single Serving Granola Bar

What you need: 

1 tablespoon peanut butter
1/2 teaspoon corn syrup (or maple syrup)
3 tablespoon rolled oats
3 tablespoon rice crispies cereal

What you do: 

Place peanut butter and syrup in small bowl, microwave on medium-high about 30-40 seconds. Add oats and cereal, stir well. With wet hand, press into log shape on piece of foil or plastic wrap. Wrap tightly and refrigerate at least 10 minutes.
Note: This is great for if you want to make your own granola bars and if you share a kitchen and do not have the space to store large trays of them in the fridge. Also great if just wanting a quick treat that is not too unhealthy! A lot of commercial granola bars have dairy by-products and are too vegan sugary for me. The PB gives this nice protein content too.

SO HOW'D IT GO?

Me again... I neglected to mention that I add 1/4 tsp cocoa powder to mine, AND if you don't want/have agave/corn/maple syrup, honey works just as well. (We're eating up some fantastic orange honey at the moment.)

I love that this is so simple to make. I want to add that you can also use amber agave syrup to substitute for the corn syrup/maple syrup.

A great treat! :) I added cranberries, raisins and walnuts then substituted 1 tbsp of oats for 1 tbsp of wheat bran.
I added a little more peanut butter and maple syrup to the mix as I think the bran may have dried it out.

I used puffed wheat cereal and I had to add extra maple syrup to get it to hold together, but it was definitely good and super easy.

I just loved this recipe.  I taught a teenager how to make it because it is just so simple.  We did add 1Tbsp. of chocolate chips thought and I thought it reminded me of a peanut butter cup chocolate bar (minus the dairy).  Loved it, YUM ;D

okterok: you could use reduced fat pb and that would lessen the calories. but if you eat a veg*n diet you shouldn't get gray hairs over calories.

Just an FYI - reduced fat PB has no fewer calories than regular.  But you're still right - just make sure the bulk of your foods are whole and that you minimize sugars and added oils.
