Single Serving Banana Bread Muffin
3 tablespoon flour
1/16th teaspoon salt
1 tablespoon very-ripe banana
1 tablespoon oil, pre-melted vegan butter, applesauce, or combo
1 tablespoon liquid, or more or less as needed to moisten batter (milk of choice, or water)
1/4 teaspoon vanilla extract
1/4 teaspoon baking powder, and tiny pinch baking soda (for flavor)
2 tablespoon Stevia
1. Preheat oven to 370F and prepare the muffin tray (liner or oil).
2. Combine the dry ingredients before forming a well in the centre. Add the water (or non-dairy milk), vanilla extract, and banana.
3. Pour 2/3 into the muffin try. Bake for 20 minutes or until a toothpick comes out clean.
4. Remove from the oven and leave to cool for ten minutes.
