Simply Great Black Beans & Rice

What you need: 

1 - 16 oz Goya black beans (undrained)
2 medium cloves garlic
1 1/2 tablespoon olive oil
1/3 cup vinegar
1 teaspoon white sugar
oregano
black pepper
white rice

What you do: 

Prepare white rice as usual.
Prepare black beans:
Pour oil into saucepan, add crushed garlic cloves. Saute, careful not to burn the garlic. Add can of black beans, with liquid. Pour in vinegar, vegan sugar, oregano and fresh ground black pepper. (You can adjust these to suit your tastes, try adding more vinegar if desired.) (Cooking time about 10 minutes).
Serve over white rice.

SO HOW'D IT GO?

It was great but I have to agree with the others that the vinegar was too strong.  Will make again.
