Simple-y Amazing Lentil Sandwhich

What you need: 

1 cup dry lentils
2 cups water
2 to 3 tablespoons soy sauce (I use Braggs Liquid Aminos)
salt, to taste
pepper, to taste
vegan mayonnaise (optional)Vegan Mayo such as Nayonase (optional)
2 or 4 pieces bread, toasted

What you do: 

1. Put the lentils and water in a medium sauce pan or pot and bring to boil. Turn down heat to simmer and cover, stirring every 5 minutes until the lentils cook evenly. They are done when they are a bit mushy. This will take from 20 to 35 minutes, depending on how hot your stove-top is. Add additional water, if needed.
2. Stir in soy sauce, salt, and pepper. (I don't use salt and pepper because I like the natural lentil flavor.)
2. Spread vegan mayonnaise on toast.
3. Spread the lentils on the toast and enjoy! Store any extra lentils in a bowl cover w/plastic wrap or a container w/a lid in the fridge.
