Simple Wrap

What you need: 

1 pound extra-firm tofu, diced
1 onion
1 - 15 ounce can white beans
Hummus (I used green olive)
Baby spinach
1 yellow summer squash
1 green summer squash
Veggie oil
Sesame oil (optional)
4 wraps (I used spinach)

What you do: 

1) If desired, fry the tofu and onions (I sauteed both) or you can just leave them uncooked. Grate the squashes and mix them together.
2) Take a wrap and spread with a layer of hummus. Then add spinach, a handful of squash mix, some tofu and onion mixture and some white beans. If you're using some sesame oil, I added it to the tofu and onion mixture once it was done cooking.
