Simple Vegan Sandwich

What you need: 

4 slices bread (I use organic whole wheat or brown rice bread)
2-4 tablespoons hummus, divided
1/3 cup blue corn chips, divided
1/3 cup baby spinach or mixed greens, divided
3-4 tablespoons dijon mustard, divided

What you do: 

1. Lay a slice of bread down and spread 1/2 the hummus on 1 slice, add some blue chips, place some greens on top of blue chips, and pour on 1/2 the dijon mustard.
2. Place the other slice of bread on top. Repeat for second sandwich.
Voila! A quick easy tasty yummy vegan sandwich. Enjoy! Love light angels and infinite blessings. Such good things are meant to be shared!
Source of recipe: My non-vegan boyfriend made this for me one day just playing around, since he was hungry. I fell in love with it and have been eating it ever since.

I'm so gonna try this. It sounds so good. I LOVE putting chips on my sandwhich. I'll rate afterward.
