Simple Sweet & Sour

What you need: 

Sauce:
1 tablespoon soy sauce
1/4 cup vinegar (I used rice vinegar)
1/4 cup vegetable broth
1 tablespoon corn starch
1/3 cup brown sugar
1/2 teaspoon minced ginger Stir fry:
1/2 red onion, chopped
2 cloves garlic, minced
1 cup carrots, chopped
1/2 yellow bell pepper, chopped
1 yellow zucchini, chopped
3 cups mushrooms, chopped
1 handful snow peas
2 tablespoons broth or oil

What you do: 

1. For sauce, mix together the soy sauce, vinegar and vegetable broth. Separately, mix together the corn starch and the brown vegan sugar.
2. Add the corn starch mixture to the liquids. Add in the ginger, and set this mixture aside.
3. Saute the vegetables in the broth or oil. Just before the vegetables are cooked, add in the sauce mixture and saute for an additional 2 minutes.
I served this over brown rice. It looked as good as it tasted.'

This was fantastic!

The sauce was soo good.
I used half a red bell pepper, broccoli, carrot coins and snowpeas and steamed them for a few minutes to make them softer.
I also put it all over rice noodles. YUM.

Really good...I used red onions in the stirfry and added a can of "mock chicken" (Asian seitan) and made a great lunch. We must do this again! ;)
