Simple Sweet and Spicy Sauted Southwest Tofu

What you need: 

1 tablespoon olive oil
1 sliced zucchini
2 cup sweet corn
7 oz. extra firm tofu
1 teaspoon oregano
1 tablespoon garlic powder
2 teaspoon turmeric
2 tablespoons chili power
2 teaspoons ground pepper
raw yellow bell pepper slices for garnish

What you do: 

Add olive oil to pan until warm. Add zucchini slices, corn, and tofu. Sprinkle on spices and there you have it!( my sister added salt because she liked it) yummmy yummyummmm

SO HOW'D IT GO?

This was great! I added red onion, red pepper, and fresh jalapeno and cayenne pepper slices to increase the sweetness/spiciness factors. And my vegetably inept husband brought home a zucchini squash instead of a zucchini, but it was a very nice substitute. Great recipe! Oh, and do add salt.
