Simple French Toast

What you need: 

1/2 cup nondairy milk (I use almond)
1 tablespoon chickpea flour
1 to 2 teaspoons sugar, to taste
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
4 slices thick bread, stale or fresh

What you do: 

1. Spray a nonstick skillet and pre-heat over medium heat.
2. In a shallow bowl, combine the nondairy milk, chickpea flour, sugar, cinnamon, and vanilla extract).
3. Dip each slice of bread in the mixture.
4. Pan-fry in your well-sprayed pan until each side is nice and brown (about 5 to 8 minutes, but check!). Serve warm with syrup and berries!
