Simple, Delicious, Low Sugar Oatmeal Raisin Cookies

What you need: 

3/4 cup flour (1/2 cup white wheat and 1/4 cup all purpose works well)
3/4 teaspoon baking soda
1/2 tablespoon cinnamon
small nutmeg, optional
dash salt, optional
1/2 cup vegan butter, softened
1/2 cup brown sugar, packed
1/8 cup raw sugar
3/4 tablespoon pure vanilla
1 Ener-G Egg Replacer (1 1/2 teaspoon Ener-G + 2 tablespoons warm water)
1 1/4 cups old fashioned oats
1/2 cup raisins

What you do: 

1. Preheat oven to 350 degrees F. In a mixing bowl, sift together ingredients, up to vegan butter.
2. In another bowl, cream together the vegan butter and sugars, then add vanilla and egg replacer.
3. Add the sugar mix to the flour mix and stir well. Fold in the oats and raisins until combined. This batter will seem dry, but trust me, it's fine.
4. Drop small spoonfuls onto an ungreased cookie sheet and bake for 10-12 minutes.

SO HOW'D IT GO?

These came out very well, but I did cut the recipe in half.. the less cookies in my reach the better!  Also, I used steel cut oats without even thinking about how chucky/hard they are, and I didn't have vanilla so I had to scrape the inside of a vanilla bean (yes I know it's usually the opposite- usually we use vanilla extract in place of a bean) YET... they still came out very, very good!!  Kind of wish I made the whole batch  ;)

My batter would not stick together, there was way too many oat. The cookies look funky, but still taste good. :)

Yummy! Made these for my non-vegan hubby and he loved them! I cookie dough was amazing on its on!

I made these with part all-purpose flour and part whole wheat, and I also added walnuts. They were delicious (very cinnamony!), but were a bit dry by day 3--maybe because of the whole wheat flour. I'll definitely try them again though.

I just wanted to add that i made these without the "1 Ener-G Egg Replacer (1 1/2 teaspoon Ener-G plus 2 tablespoons warm water)" because i didnt have it. These still turned out great.  ;)b

MMMMMmmmmm!!! these are lovely. i changed some things according to taste and what was in my cupboard: used all whole wheat flour, added a pinch more salt, some nutmeg and cardamon, left out the rasins and instead added some orange zest and a few twists of black pepper...yummy!!! thanks for the recipe!

These are absolutely amazing. I'm actually a little angry that I made them, because I can't stop eating them. I am going to give them all away tomorrow. Ha.
