Sesame (Mock) Prawn Toast
1 pound firm tofu
1-2 teaspoons kelp seasoning, optional
1 teaspoon salt
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
2 teaspoons ginger, minced
1 tablespoon light soy sauce
2 tablespoons green onions, chopped
1 1/2 teaspoons sesame oil
10 slices thinly sliced bread, crusts removed
4 tablespoons sesame seeds
oil, as needed for deep frying
1. Place the tofu, kelp powder, salt, egg replacer, ginger, soy sauce, onions and sesame oil in a food processor and blend into a paste.
2. Cut each slice of bread diagonally into 2 triangles. Spread the paste on the bread, making a slight mound in the center. Put the sesame seeds on a plate and press the paste side of each triangle into the seeds.
3. Heat the oil to a medium heat and deep-fry the toasts paste side down for 2 to 3 minutes then turn them over and fry until they are golden brown.
4. Remove from the oil and drain on paper kitchen towel. Serve immediately with sweet chili sauce.
Use bread that is not fresh as it will absorb less oil. Also, the tofu can be substituted with the same quantity of mock prawn meat if you're lucky enough to live near an Asian grocer that sells it.

This was pretty good. I had to add way more kelp powder, and I used fresh ginger (can't recall if that is what the recipe calls for). Also you definitely want to use a stale crusty bread. The sesame seeds were awesome.
Shrimp toast was one of my favorite non-veg appetizers and I'm glad I now have this recipe.
