Seaweedy Soup

What you need: 

4 cups water
1 pound silken tofu, cubed
1 large onion, chopped
1 1/2 cups dry quinoa
1 dash kelp granules
2 cloves garlic, chopped
2 to 3 sheets toasted nori/laver, sliced
Salt, to taste
2 to 4 tablespoons tamari soy sauce

What you do: 

1) Place water, tofu, onion, quinoa, kelp granules, and garlic into a pot and bring to a boil. Lower head to medium and cook for about 10 minutes. Add nori and simmer for 5 to 10 more minutes, or until quinoa is tender.

2) Add salt and tamari to taste and turn off heat. Enjoy!
