Scrambled Tofu

What you need: 

1/2 block soft tofu
garlic
olive oil
curry powder

What you do: 

1.Chop the garlic, and put it in a pan with the olive oil, bringing it to a low heat. Once its hot, add as much curry powder as you want (it takes quite a bit, so don't be stingy)
2. Take the tofu and squeeze the excess water out of it. Cruble it into medium-sized pieces, and saute it until brown.

SO HOW'D IT GO?

Had a case of super firm cubed tofu to use up, so made recipe with that. It didn't really fall apart on its own, so I ended up having to smush it with my fingers to get that scrambled egg appearance.  Added onion powder and white pepper. Went easy on curry powder, so it was a little bland but not inedible. Served on whole wheat tortilla for a breakfast burrito. Lovely recipe to tinker with. :)>>>

Great vegan "starter" recipe! Tastes like scrambled eggs--who knew?
