Sautéed Vegetable Sandwich

What you need: 

1 red pepper
1 green pepper
1 red onion
1/2 package of cremini mushrooms, sliced
1/2 tomato
sandwich rolls (I make homemade)
vegan mayonnaise (Vegenaise)
olive oil
toasted sesame oil
Italian seasoning
lettuce leaf

What you do: 

Wash vegetables and chop up the peppers and onion into thin slices. Chop tomato into thin slices.
Heat some of the toasted sesame oil on med-high. Add the peppers, onion, tomato, and mushrooms into a large skillet. Season with salt and pepper and make sure they get coated thoroughly with the oil. Sauté on high until nice and browned. Set aside.
Pour a tiny bit of olive oil on both sides of the sandwich bread. Spread Vegenaise on both sides and mix with the oil. Sprinkle Italian seasoning on the Vegenaise/olive oil mix. Add vegetables and put a leaf of lettuce on top. Enjoy!
