Sausage Breakfast Bake

What you need: 

2 cups flour
1/2 cup vegan butter
1/4 teaspoon sage (omit if you don't care for a strong sage flavor)
14 oz vegan sausage (Gimme Lean)
2 tablespoons vegetable oil
1/4 cup maple syrup OR sugar (if using sugar you will need to reduce the amount of flour)
salt & pepper as desired

What you do: 

Preheat oven to 350°.
Brown crumbled sausage in oil.
Combine flour (1/2 cup at a time), butter, sage, maple syrup (or sugar), salt and pepper in a medium mixing bowl with a fork until crumbly in texture. Adjust flour as necessary.
Layer 2/3 of flour crumble mixture in an 8X8 baking dish.
Layer sausage on top of flour mixture reserving 3 tablespoons for a *gravy topping if desired. Add remaining flour crumble mixture on top.
Bake at 350° for 20 minutes or until nicely browned.
Suggested serving with a small amount of syrup or *gravy topping and fresh fruit on the side.
* "Sausage" gravy: Add 2 tablespoons vegetable oil to already browned sausage in pan. Add 5 tablespoon flour and brown slightly. Add 3/4 cup soy milk or vegetable broth and stir constantly over medium heat until thickened to desired gravy consistency. (Use more or less liquid for desired thickness.) Salt and pepper to taste while thickening.

SO HOW'D IT GO?

This is pretty good, nothing amazing.  The crumble mixture stayed too crumbly when baking & i was hoping it would form more of a breakfast cake-like texture with the sausage.  Instead it just sorta ended up being being sausage & crumble bits that i had to spoon out of the dish.  maybe if there was some soymilk added to at least the bottom layer of crumbles to make it more doughlike it would hold the whole thing together better.  Tastewise is was good, but i'd choose a plate of pancakes, sausage and syrup over this for the same flavor and less fat (from the vegan butter).
