Sarahs Pasta Salad
1 packet of tri-colour pasta (bows/penne/macaroni - anything small!)
extra virgin olive oil
Percy Pepper and Suzie Salt (quote Ainsley - hero of all time!)
2-3 sticks celery
2 cloves garlic
pepper (any colours)
Boil a pan of water and place in all the pasta. While the pasta is cooking wash all vegetables and chop into small cubes.
Next, in a small bowl mix about 2 tablespoons of olive oil with 2 tablespoons of balsamic vinegar. Add 2 crushed garlic cloves, salt and pepper to taste. Keep experimenting with all these ingredients until you have the required flavour.
Once pasta is cooked, rinse thoroughly with cold water until the pasta has cooled. Drain the pasta.
Mix all of the vegetables (yes raw!) with the pasta in a large bowl. Then, pour the dressing into the bowl and mix. Add salt or pepper to taste. (sometimes necessary to add more vinegar to ensure a real kick!)
NB: Any vegetables can be used in this recipe - the above just happen to be my favourite!
