1 small yellow onion, diced
2-3 roma tomatoes, diced
1 cup cilantro, chopped
2-3 fresh jalapeños, seeded, de-veined, and diced
1 large avocado or 2 small
juice from 2 lemons
1 teaspoon sea salt
1 (15 ounce) can black beans, optional
1. Put tomatoes and onion in a large mixing bowl. Add jalapenos and cilantro to your bowl.
2. Dice and add avocado. Now squeeze all the juice of your 2 lemons. Be careful of the seeds.
3. Add salt, and mix all together. Add beans, if desired. Serve with vegan chips, tacos etc.
