Sailor's Salty Oatmeal Cookies

What you need: 

1 cup shortening (I use Soy Garden)
1 cup sugar
substitute for 1 egg (I combine 1 tablespoon ground flax with 3 tablespoon water)
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 cups oats
plus extra salt and sugar

What you do: 

Ahoy! I went to DC a few years ago and saw the most delicious-looking "Salty Oatmeal Cookies" for sale in a tea shop. Ok, so I couldn't actually try them, but I am positive that these vegan ones are better!
Preheat oven to 375 degrees Fahrenheit.
Cream together shortening, sugar, vanilla and egg substitute. In a separate bowl sift together flour, baking soda, baking powder, and salt. Combine both mixtures. Fold in the oats.
Use a teaspoon to drop cookies onto baking sheets. Be sure to flatten them! Then sprinkle with extra salt and sugar to taste.
Bake 6-8 minutes, until they begin to become golden.
Don't let your mateys get too many o' these- they're too good to share.
*One variation that I've tried (with success!) is substituting 1 1/2 cups oats with ground up Ritz crackers.

THESE COOKIES RULE.
I substituted half of the shortening (I used Earth Balance) with applesauce, used Ener-G egg replacer, a dash of cinnamon, and added 1/2 cup of raisins.  They were just the right cross between chewy and soft.  I will DEFINITELY be making these again!
Oh, yeah...and sprinkling the salt on top REALLY gives it a nice kick!
