Rocky Road Cookies

What you need: 

1 1/4 cups flour (You can use whole grain and/or replace1/4 cup flour with cocoa powder for a double chocolate cookie)
1/2 teaspoon baking soda
pinch salt
1/4 cup sugar
1/4 cup margarine (You can replace up to 1/2 margarine with nut butter; I've used almond butter)
1/4 cup nondairy milk (I use soy)
1/3 cup peanuts, halved
1/3 cup dark chocolate chips or chunks
1/3 cup vegan marshmallows, chopped

What you do: 

1. Preheat oven to 375 degrees F. Grease a cookie sheet. Mix flour, baking soda, and salt in a bowl. In another dish, cream together sugar, margarine, and milk.
2. Add the peanuts and chocolate to the dry ingredients, followed by the creamed ingredients. Using your hands, form balls of cookie dough.
3. Press the balls onto prepared cookie sheet. Press into each ball 1 or 2 pieces chopped marshmallow. Bake the cookies for 8 minutes.
Source of recipe: I had some Sweet & Sara Vegan Marshmallows to use up, so I created these cookies. There is very little sugar in the cookie dough because the chocolate and marshmallows contribute to the cookies' sweetness.

SO HOW'D IT GO?

I made some changes:

1. I didn't have any nuts, so I substituted the nuts for 1/3 c. of Kashi Go Lean Crunch! cereal. I made sure that the big chunks were made into smaller pieces for cooking purposes.

2. I only had vanilla soymilk, so I used that, but when I put all of the ingredients together in one bowl, they did not adhere as well to one another as I had expected, so I put in 1/3 to 1/2 c. of vanilla soymilk.

3. I mixed the marshmallows in with the recipe, instead of waiting until all other ingredients were mixed together. I put more marshmallows in the mixture than this recipe suggested.

4. I baked them for 5 minutes, and they came out with just a hint of brown. I would suggest cooking them a few minutes longer if you do not want them to be gooey.

SOOOOOO GOOD!!!! Sadly I didnt have the marshmellows because whole foods ran out so I added a little extra sugar. But it was still soooooooooo amazing. My whole family fell in LOVE with them :)>>> amazing

These were deelicious. I added the cocoa powder like it said and i mixed the marshmallows in when i put in the walnuts and carob chips so it'd stick better.
My mom even loved them but she said they were a little bit rich for her taste. But they were perfect for me  :)>>>
