Roasted Red Pepper and Mozzarella Sandwich

What you need: 

1 serving crusty bread, or 1 Organic Miniature Baguette

1-2 pieces Fire Roasted Red or Yellow Bell Peppers

3 pieces fresh mozzarella medallions, or sliced fresh mozzarella

1 tsp balsamic vinegar

4 fresh basil leaves

Salt and black pepper

What you do: 

1. Slice baguette open; toast if desired

2. Drizzle or brush blasamic vinegar on one side of bread. Layer on roasted red peppers, mozzarella, and basil.

3. Sprinkle with salt and pepper to taste. Close sandwich and serve.
