Ridiculously Yummy Black Bean Filling

What you need: 

1 can black beans, drained and rinsed
2 chipotle chilis in adobo sauce (canned) diced and seeded
2 tablespoon brown sugar
1/2 cup frozen corn
cilantro (optional)
vegan cheese of your choice (optional)
flour tortillas

What you do: 

Place the frozen corn in a bowl of hot water. This will thaw out the corn as you work. Put the beans, chilis and brown sugar in a food processor. If you don’t have access to one mash it all in a bowl. It still tastes awesome even though it will be chunky. Puree until smooth. Heat a nonstick pan or griddle on med-high.
If making quesadillas spread the mix on one tortilla. Sprinkle half of the drained corn on top. Top that with cilantro and cheese if using. Adding diced onion if you have it is also really good. Top with another tortilla and heat until browned and slightly crisp.
Use your imagination to use the filling in other ways. My 2 1/2 yr old son LOVES these and he hates everything. I eat these 2 times a week.

I liked this mix of beans, chilis and sugar... I put them in a tortilla with some sauteed veggies (onion, sweet potato, corn, red bell, and yellow squash) burrito style with soy cheeze. I actually doubled the recipe and did one can of black beans and one can of kidneys with 4 chilis... it was a tad bit too spicy for me (and I LOVE spice!!!) next time I'll only do 2-3... and next time I hope I have cilantro because I think that would be really good! Thanks for the recipe!

This actually was ridiculously yummy!  I gauge most of my responses on what my husband thinks because he's a bit more truthful about the taste than I am.  I'll make anything, as long as it fits into my lifestyle choices, but since he's a non-veg, his opinion on veg stuff really hits home with me.  I used drained canned corn instead of frozen (I only had a can of Green Giant Mexicorn, which went well with the dish I thought).  Also, I used multi-grain tortillas, chopped green onion, and vegan cheddar (just a tad).  I made these into quesidillas.  Mmmmm!  The filling was sweet and savory.  It made about 4 quesidillas with maybe a spoonful of filling left over.  This is a definite keeper!

This sounds really yummy, I am no really a very good vegan because beans and legumes scare me...so I am always looking for tasty bean recipes to try, I will sure try this one soon1 Thanks.
