Rice as a Meal

What you need: 

1/3 cup brown rice
3 cups water
1/4 cup dried cranberries
1/3 cup crushed walnuts
1 tablespoon soy butter
1/3 cup frozen peas
1/3 cup diced carrots
1 tablespoon thick teriyaki glaze

What you do: 

Start brown rice cooking. 15 minutes after you place the rice in the boiling water add the diced carrots, butter and teriyaki.
15 minutes after that add the rest of the ingredients. Cook until the rice is done.
It has such good ingredients when I make this it is all I have for dinner.

SO HOW'D IT GO?

This is a very pretty and colorful dish with great texture. And well balanced with grains, fruits, veggies, and nuts. I didn't have teriyaki glaze in my fridge (must have been used to flavor some nasty meat) so I just used some mustardy dressing I like. I think any dressing will really work.
