Rice and Black Bean Pilaf
1 1/2 cups rice (brown or white)
2 teaspoons olive oil
3/4 cup celery , chopped
1/2 cup onion, chopped
14 ounces vegetable broth
1 (15.5 ounce) can black beans, rinsed and drained
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon lime juice
shredded cheese alternative, optional
1. Cook rice according to the directions. Heat oil in large nonstick skillet coated with cooking spray over medium-high heat.
2. Add celery and onion; cook 4 minutes, stirring occasionally. Add cooked rice and everything except lime juice and vegan cheese. Stir gently. Bring to boil; reduce heat, and simmer 10 minutes, or until liquid is absorbed.
3. Add lime juice and mix gently. Sprinkle with cheese before serving, if desired
