Red Cabbage Coleslaw

What you need: 

1 small shallot, minced
2 to 3 tablespoons balsamic vinegar, to taste
2 to 3 tablespoons olive oil, to taste
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon sugar or sweetener of choice
salt or celery salt, to taste
fresh ground black pepper, to taste
1 medium sized head red cabbage quartered, cored, thinly sliced
8 to 10 carrots, shredded

What you do: 

1. In a bowl, combine the shallot, balsamic vinegar, olive oil, soy sauce, mustard, sugar, salt, and pepper; whisk thoroughly.
2. Add the cabbage and carrots; toss to combine.
I made this coleslaw for a dinner party last weekend and it was the surprise hit of the night. The beautiful colors make the plate look nice too.

SO HOW'D IT GO?

This recipe is super easy to make and so light and tasty on a warm day. I skipped the shallots and added just a splash of agave nectar. Also it was pretty to look at right before it was devoured.
