Really Yummy Ginger Cookies

What you need: 

2 cups sifted flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ginger (I use freshly grated, but a little less than 1 full tsp)
1/2 teaspoon cloves (I use the pulvarizied jar variety)
3/4 cup margarine
1 cup sugar
1 egg substitute
1/4 cup molasses
a small bowl of sugar for dipping

What you do: 

Preheat oven to 350.
Sift together the flour, baking soda, salt, cinnamon and cloves. In another bowl cream until soft: margarine and 1 cup of vegan sugar, add the ginger. Add to the wet mix: egg substitute and molasses till blended, then add ~a little at a time~ the dry ingredients to the wet mix.
Form into 1 balls, dip just the top into vegan sugar bowl, then place on prepared cookie sheet, vegan sugared side up....(the baking sheet can be a non-stick or a greased regular). Place a few inches apart on sheet and bake for 12 to 15 mins. * I opt for the lower time, and let the cookies cool for just a few mins. on the sheet before transfering them to a cooling rack. This way they stay chewy. If you cook for too long, they become hard upon cooling....

SO HOW'D IT GO?

These tasted amazing, but they came out really flat for me. I added in a little more flour to the second batch and they came out much better... but I cooked them too long and they're hard. Taste is GREAT though, and I'll definitely try these again.

These are quite tasty! Although, I will probably use less molasses next time, but I think this is just a personal preference. They are very yummy aside from that, and now my apartment smells divine! Thanks so much for sharing!

Great Cookie! I added 1/4 cup of applesauce because I was just shy on molasses and margarine and it worked out great. I also added a lot more of the spices, which was needed. I will make these again.

I brought a batch of these to a barbecue last weekend and they were a huge hit... i mean HUGE!  Everyone was complimenting me on them. I'll definitely be making more very soon. They'd make a great gift for the holidays too...everyone loves gingerbread during the holidays!

These cookies are fabulous. They made the house smell wonderful and reminded me exactly of the cookies my mom used to make! If you are looking for the 'snap' and yummy ginger taste, this is the cookie for you!!
