Really Good Pumpkin Spread

What you need: 

1/4 buttercup pumpkin
handful pumpkin seeds
1 tablespoon miso paste
1 tablespoon ground cumin
1 tablespoon nutritional yeast
1 tablespoon sweetener
1 heaped teaspoon dried oregano
2 cloves garlic, crushed
1/2 teaspoon salt

What you do: 

1. Chop the pumpkin into chunks and put in a pot with a little water and cook.
2. When pumpkin is tender, drain off and reserve cooking water
3. In a bowl, mash the pumpkin with a fork. Add the rest of the ingredients and mix well.
4. If you want the mixture thinner, add the reserved cooking water until you have the consistency you want.
I just made this and had it spread on fresh baked bread, it was really yum!
