Raw Vegan Vanilla Chai Chia Pudding

What you need: 

1/4 cup chia seeds
1/4 cup coconut
1/4 cup cashews, soaked
1 1/2 cups water
1/2 dropper Stevia vanilla creme
8 dates, pitted
1 teaspoon lucuma powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

What you do: 

1. Mix together chia seeds and coconut. Blend all remaining ingredients.
2. In a glass dish, mix blended mixture with chia mixture and let sit for about 20 minutes, stirring every 10 minutes.
3. Add additional water if needed. Keep refrigerated.

Which brand of vanilla creme stevia do you use?


Great this recipe is so easy and you can change flavors really easy. Sometimes I use dates sometimes I don't, I use almond milk sometimes and sometimes I use raw cashews. You can make it just vanilla or not.

I LOVE THIS PUDDING! The flavors are amazing! I am lucky enough to be able to purchase lucuma powder in bulk where I work, so I splurged and got some for this recipe. What a treat! I forgot the dates (because I thought I had some but turns out I don't), but it was actually sweet enough. I mixed in some vanilla extract and stevia powder in place of the vanilla stevia, and it was perfection. Yum. Yum. Yum. Thank you!
